Appetizing Pork Mince Yuk Sung

This recipe is ideal for a midweek supper and is on the table in less than 35 minutes. This delicious and healthy pork Yuk Sung family friendly dish is extremely simple to create and is bound to be a hit with the whole family.

Ingredients

  • 1 tbsp Olive Oil
  • 1 Onion
  • 3 cloves Garlic
  • 1 inch piece of fresh Ginger (or alternatively use 1 tsp Ginger Puree)
  • 2 Small Carrots
  • 250 g Mushrooms
  • 2 Orange / Red Peppers
  • 500 g Pork Mince
  • 3 tsp Chinese Five Spice
  • 2 tbsp Dark Soy Sauce (for colouring)
  • 2 tbsp Oyster Sauce
  • 2 tbsp Light Soy Sauce (for flavour)

To Serve:

  • 3 Spring Onion
  • 2 Red Chillies (OPTIONAL)
  • 2-3 Little Gem Lettuce

METHOD

  1. Firstly prepare your vegetables: Chop onion and mushrooms. Peel and crush garlic. Peel and finely chop carrots. Peel and chop Ginger (if using fresh).
  2. Heat half the olive oil in big open wok, fry up the pork mince until browned and cook through. Then remove from pan and stand to the side.
  3. Add the rest of the olive oil to the pan and fry onion, garlic and ginger for roughly 3 minutes until soft.
  4. Add mushrooms and carrots and fry for an additional 5 minutes.
  5. Place pork mince back in the frying pan, add in five spice, dark and light soy sauce and oyster sauce.
  6. Cook on a medium to low heat for roughly 10-15 minutes, until the mixture is browned, sauce has thickened slightly and immersed into the pork mince.
  7. Serve in small washed gem lettuce leaves, and top with chopped spring onions and chopped chillies and enjoy this delicious meal!
