Collar of bacon is an old Irish piece of bacon. It is juicy and succulent. It has plenty of lean meat, but slow-cooking it makes the most of its sweet flavours and soft texture, making for a real hearty Irish dish, cooked with cabbage or turnips. The key to cooking this joint is simmering it slowly for the required time and then try glazing it in the oven.

Collar bacon is best when boiled on a medium heat for 2 hours. Try serving it with cabbage and some buttery mash potato, for a real Irish Dish.

Storage Instructions

Your meat will arrive frozen, see pack for shelf life, each cut of meat is labelled with a use by date.

When your meat arrives simply pop it into your freezer.

When you have selected what meat you would like to eat for the day, thaw items by leaving them on the bottom shelf in your fridge on a plate covered overnight before cooking. Once thawed leave to stand for 20 minutes at room temperature before cooking. 

Remember once thawed use within 2 days.
